Sunday Pleasures: Vegan Banana Pancakes

Fancy having pancakes without feeling guilty? Sporty spice and foodie Sophia knows what to do:

Pancakes are always a good idea right? Well, how do you feel when I tell you that these are healthy as well? Yep, no kidding. You can enjoy them without feeling a single pang of guilt! 

Here´s what you need:

  • 2 Cups of oats (I used fine oats)
  • 1 Cup of plant based milk
  • 4 Teaspoons of baking power
  • 2 Bananas
  • 1/2 Cup of flour
  • 1 Teaspoon of cinnamon
  • Some coconut oil
  • Pomegranate seeds
  • Some maple syrup 

1. Mash up the banana until you have smooth mixture (I like to leave a few slices out so I have some to add on top later).

2. Add the other ingredients and mix. 

3. Preheat the pan and add some coconut oil. When the oil is warm add about one tablespoon of pancake dough and press it down to get the typical pancake form. Place a lid over the pan and wait for about five minutes before you turn the pancakes. Take your time while baking the pancakes. Don’t rush - let them get nice and fluffy. I know you want them as quick as possible but believe me they will be better if you leave them a little longer.

4. I like to top my pancakes with some slices of banana, pomegranate seeds, and of course some maple syrup.
